- 2 pounds Yukon Gold or russet potatoes, peeled and cubed (900g)
- 4 tablespoons unsalted butter (56g), divided
- 1/2 cup whole milk or cream (120ml)
- 3 cups green cabbage or kale, finely shredded (about 250g)
- 3 green onions, sliced
- Salt and freshly ground black pepper to taste
Instructions
- Cook the Potatoes: Place peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15–20 minutes until fork-tender. Drain thoroughly and return to the pot.
- Sauté the Greens: While potatoes cook, melt 2 tablespoons of butter in a skillet over medium heat. Add shredded cabbage or kale and cook for 5–7 minutes until tender. Stir in sliced green onions and cook for another minute.
- Mash the Potatoes: Add remaining butter and warm milk or cream to the drained potatoes. Mash until smooth and creamy. Season with salt and freshly ground black pepper.
- Combine: Fold the sautéed greens into the mashed potatoes until evenly incorporated.
- Serve: Transfer to a serving bowl and create a small well in the center for an extra pat of butter before serving.

- Drain potatoes completely for the creamiest texture.
- Use warm milk to prevent cooling the mash.
- Avoid overmixing to keep potatoes fluffy, not gluey.
- Season generously and taste before serving.
