Ingredients

  • 2 large cucumbers, thinly sliced
  • 8 oz (225 g) mozzarella balls (ciliegine or bocconcini), drained
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar or lemon juice
  • 1 clove garlic, minced
  • 1 tbsp fresh basil or dill, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: cherry tomatoes, red onion slices, crushed red pepper flakes

Instructions

  1. Prepare Cucumbers: Wash and slice cucumbers thinly. Pat dry to remove excess moisture.
  2. Drain Mozzarella: Place mozzarella balls in a colander, drain, and pat dry.
  3. Make Dressing: Whisk olive oil, vinegar or lemon juice, garlic, salt, and pepper in a small bowl.
  4. Combine: Add cucumbers and mozzarella to a large bowl. Pour dressing over and toss gently.
  5. Add Herbs: Sprinkle fresh basil or dill and toss lightly again.
  6. Chill & Serve: Refrigerate 10–15 minutes, then serve chilled.

  • Fresh mozzarella balls in brine work best for creaminess.
