- 2 large cucumbers, thinly sliced
- 8 oz (225 g) mozzarella balls (ciliegine or bocconcini), drained
- 2 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar or lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh basil or dill, chopped
- Salt and freshly ground black pepper, to taste
- Optional: cherry tomatoes, red onion slices, crushed red pepper flakes
Instructions
- Prepare Cucumbers: Wash and slice cucumbers thinly. Pat dry to remove excess moisture.
- Drain Mozzarella: Place mozzarella balls in a colander, drain, and pat dry.
- Make Dressing: Whisk olive oil, vinegar or lemon juice, garlic, salt, and pepper in a small bowl.
- Combine: Add cucumbers and mozzarella to a large bowl. Pour dressing over and toss gently.
- Add Herbs: Sprinkle fresh basil or dill and toss lightly again.
- Chill & Serve: Refrigerate 10–15 minutes, then serve chilled.

- Use English cucumbers for fewer seeds and less wateriness.
- Fresh mozzarella balls in brine work best for creaminess.
- For best results, dress salad just before serving to avoid sogginess.
