Description

This High Protein Chocolate Peanut Butter Chia Seed Pudding is creamy, chocolatey, and packed with plant-based protein, fiber, and healthy fats. It’s an easy no-cook recipe perfect for breakfast, post-workout fuel, or a healthy dessert that truly satisfies.

Ingredients

Scale
  • 2 tablespoons (16g) chia seeds
  • 1 scoop (30g) chocolate protein powder
  • 1 tablespoon (16g) natural peanut butter
  • 1 tablespoon (5g) unsweetened cocoa powder
  • 1/2 cup (120ml) unsweetened almond milk (or milk of choice)
  • 12 teaspoons (5–10ml) maple syrup or honey (optional)
  • Pinch of salt (optional)

Instructions

  1. Mix dry ingredients: In a bowl or jar, combine chia seeds, protein powder, cocoa powder, and salt. Stir well.
  2. Add wet ingredients: Pour in almond milk and mix until smooth. Add peanut butter and sweetener if using, stirring thoroughly.
  3. Rest and stir again: Let sit for 5–10 minutes, then stir again to break up any clumps.
  4. Chill: Cover and refrigerate for at least 1–2 hours or overnight until thick and creamy.
  5. Serve: Stir once more before serving and add desired toppings.

Notes

  • Stir twice during the first 10 minutes to prevent clumping.
  • Add a splash of milk before serving if the pudding is too thick.
  • Blend before chilling for an ultra-smooth, mousse-like texture.
  • Use high-quality protein powder and cocoa for best flavor.
  • Store covered in the refrigerator for up to 5 days.
