  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder

  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 cup beef broth (preferably low sodium)
  • 1/2 cup sliced pepperoncini plus 2–3 tablespoons juice
  • 2 tablespoons olive oil (for browning; optional but recommended)

Instructions

  1. Optional – Brown the beef: Heat olive oil in a skillet over medium-high heat. Sear roast 2–3 minutes per side; transfer to slow cooker.
  2. Season: Sprinkle salt, pepper, Italian seasoning, garlic powder, onion powder, and red pepper flakes over the beef.
  3. Add broth: Pour in the beef broth to keep the roast moist and flavorful.
  4. Pepperoncini: Scatter sliced pepperoncini over the roast and add 2–3 tablespoons of their juice.
  5. Slow cook: Cover and cook on LOW 8–10 hours (or HIGH 4–5 hours) until fall-apart tender.
  6. Shred: Rest 10 minutes, then shred with two forks. Discard large fatty pieces and return meat to juices; stir to coat.
  7. Serve: Spoon hot beef with juices over low-carb sides or enjoy on its own.
