Ingredients
Scale
- 3 pounds boneless beef chuck roast
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper
- 1 tablespoon dried Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon crushed red pepper flakes (optional)
- 1 cup beef broth (preferably low sodium)
- 1/2 cup sliced pepperoncini plus 2–3 tablespoons juice
- 2 tablespoons olive oil (for browning; optional but recommended)
Instructions
- Optional – Brown the beef: Heat olive oil in a skillet over medium-high heat. Sear roast 2–3 minutes per side; transfer to slow cooker.
- Season: Sprinkle salt, pepper, Italian seasoning, garlic powder, onion powder, and red pepper flakes over the beef.
- Add broth: Pour in the beef broth to keep the roast moist and flavorful.
- Pepperoncini: Scatter sliced pepperoncini over the roast and add 2–3 tablespoons of their juice.
- Slow cook: Cover and cook on LOW 8–10 hours (or HIGH 4–5 hours) until fall-apart tender.
- Shred: Rest 10 minutes, then shred with two forks. Discard large fatty pieces and return meat to juices; stir to coat.
- Serve: Spoon hot beef with juices over low-carb sides or enjoy on its own.
Notes
- Best cut: Use marbled chuck roast for tenderness; lean roasts can dry out.
- Low & slow: Cooking on LOW yields the most tender texture.
- Juices matter: Return shredded beef to its cooking liquid for maximum flavor.
- Adjust heat: Add extra pepperoncini or red pepper flakes for a spicier kick.
- Serving ideas: Cauliflower rice, zucchini noodles, lettuce wraps, roasted eggplant, steamed broccoli or sautéed spinach; top with provolone or mozzarella.
- Presentation: Serve in a wide bowl, spoon over juices, garnish with parsley or extra pepperoncini.
- Storage: Refrigerate up to 4 days; reheat with a splash of broth. Freeze up to 3 months.
- Leftovers: Add to scrambled eggs, low-carb wraps, stuffed peppers, or cauliflower mash bowls.
- Variations: Add mushrooms/onions; swap in banana peppers; use rosemary & thyme; stir in sun-dried tomatoes; a spoon of tomato paste for richness.
- Avoid: Lifting the lid often, under-seasoning, overcooking on HIGH, or skipping the shred-and-return step.
- Instant Pot: Sear on Sauté, then cook High Pressure ~60 minutes; natural release.
- Diet notes: Naturally keto/low-carb; paleo/Whole30 with compliant broth and no cheese.
- Prep Time: 10 minutes
- Cook Time: 8 hours (LOW) or 4–5 hours (HIGH)
