This no-bake Lemon Vanilla Custard is light, creamy, and packed with bright citrus and smooth vanilla flavors. It’s an elegant stovetop dessert that comes together in minutes—no oven required.
Ingredients
✅ 2 cups whole milk
✅ 4 egg yolks
✅ ¼ cup granulated sugar
✅ 2 tbsp cornstarch
✅ 2 tbsp fresh lemon juice
✅ 1 tsp vanilla extract
✅ Zest of 1 lemon (optional)
✅ Pinch of salt
Instructions
1️⃣ Whisk the Egg Yolks:
In a bowl, whisk the egg yolks until smooth. Set aside.
2️⃣ Combine Milk Mixture:
In a saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until it begins to steam.
3️⃣ Temper the Eggs:
Slowly pour a bit of the hot milk into the egg yolks while whisking. Pour the mixture back into the saucepan.
4️⃣ Cook Until Thickened:
Return to heat and cook, whisking constantly, until custard thickens enough to coat a spoon. Do not boil.
5️⃣ Finish with Flavor:
Remove from heat and stir in lemon juice, zest, and vanilla. Whisk until smooth.
6️⃣ Strain (Optional):
Strain through a fine mesh sieve into a bowl for extra smoothness.
7️⃣ Chill:
Pour into ramekins. Press plastic wrap directly onto surface. Chill 2–3 hours or until set.
8️⃣ Serve:
Garnish with whipped cream, berries, or lemon zest. Serve cold.
Notes
Use fresh lemon juice and zest for best flavor.
For dairy-free, use full-fat coconut milk and a little extra cornstarch.
Do not skip tempering step—this keeps eggs from scrambling.
