For the Cookie Dough:

- 2/3 cup granulated sugar (135g)
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (240g)
- 1/4 teaspoon salt
For the Filling:
- 1/2 cup raspberry or strawberry jam (or jam of choice)
- Powdered sugar, for dusting (optional)
Instructions
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy, about 2–3 minutes.
- Add Egg & Vanilla: Mix in egg yolk and vanilla until fully combined.
- Add Dry Ingredients: Gradually mix in flour and salt until a soft dough forms.
- Chill Dough: Shape into a disk, wrap, and refrigerate for 30 minutes.
- Preheat Oven: Preheat to 350°F (175°C). Line baking sheets with parchment.
- Shape Cookies: Roll dough into 1-tablespoon balls. Press two angled indentations to form a heart.
- Fill: Spoon about 1/2 teaspoon jam into each heart.
- Bake: Bake 12–14 minutes until edges are lightly golden.
- Cool & Serve: Cool slightly, dust with powdered sugar if desired, and enjoy.
